Blueberry Crumb Coffeecake

I have been meaning to make this one for a while. I love coffee cake and blueberries are one of my favorite fruits! This did not disappoint and I also appreciated that it didn't make an enormous amount of breakfast food that would eventually go to waste.

What you need:
  • 1/2 cup brown sugar
  • 1/4 cup maple syrup
  • 3/4 cup vanilla yogurt
  • 1 overripe banana, mashed
  • 1/4 cup melted butter
  • 1 egg
  • 3/4 cup rolled oats
  • 1 3/4 cup flour
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 2 tsp. cinnamon
  • 1/4 tsp. salt
  • 1 cup blueberries
  • 1/2 cup pecans (chopped) - omitted due to allergy in the family
  • 1/2 cup flour
  • 1/4 cup maple sugar
  • 1/4 cup melted butter
  • Cinnamon
Directions:
Mix brown sugar, maple syrup, yogurt, banana, butter, egg, and rolled oats in a bowl. 
Set aside for 10 minutes.

Mix flour, baking powder, baking soda, cinnamon, and salt in a bowl.

Mix both of them together and add blueberries.


Pour into a greased 8-inch square pan.
Mix together pecans, flour, sugar, butter, and cinnamon until they form crumbs. 
Place on top of the blueberry mixture and spread evenly.

Bake at 375 for 40 minutes or until a toothpick comes out clean when inserted in the center.

    This looks absolutely divine! We picked a ton of fresh blueberries this last summer and I need more ideas to use them.
