I will never make another grilled cheese again that hasn't been rubbed with some garlicky goodness! That step blew these sandwiches out of the water! I really loved the fillings too - the Italian cheese was perfectly paired with tomato and bacon.

What you need:
- 8 slices bacon, cooked until crispy
- Shredded Parmigiano-Reggiano cheese
- Italian bread (I used Italian sourdough)
- 2 ripe tomatoes, sliced thinly
- 1 to 2 large garlic cloves, peeled and cut in half
- Lay down 4 slices of bread and top with some cheese.
- Then add 2 slices of bacon to each piece of bread and then a few slices of tomato.
- Top with some more cheese and then second slice of bread.
- Butter the outside of both slices of each sandwich.
- Brown each side in a skillet over medium heat.
- After both sides have browned, remove from skillet {or live on the wild side and do them in the skillet!} and immediately rub each side of all sandwiches with cut side of the garlic cloves.
