Who knew a zucchini could add so much to barbecue pulled chicken!

This is probably my favorite pulled meat sandwich recipe - I love the addition of zucchini!

What you need:
- 1 1/2 cups BBQ sauce
- 1 cup grated zucchini, raw and peeled
- 1/4 cup vegetable or chicken broth
- 2 tbsp. oat bran (if you cannot find this, you can use oats)
- 4 skinless, half chicken breasts (2 lb.)
- 6 hamburger buns or English muffins
- Preheat slow cooker to desired setting. In slow cooker, mix BBQ sauce with zucchini, broth and oat bran.
- Add chicken and toss. Cover. Cook 5 hours on low or 2 1/2 hours on high. For best results, do not uncover during cooking.
- Remove chicken and shred using 2 forks. Toss with BBQ sauce. Serve on buns or muffins.
