Spinach & Ham Frittata

Way back when I made this, my oldest two kids looked at me like I was insane trying to give them something so green for dinner (breakfast for dinner). I think as I write this in late 2017 that when I do make this again to update the picture (it desperately needs it!), Matthew and Cami won't bat an eye. They eat spinach willingly and love frittatas. I think even Nick would gobble this up now too!

What you need:
  • Vegetable cooking spray
  • 6 eggs
  • 1/2 cup skim milk
  • 4 oz. shredded Cheddar cheese
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 1/2 cups prepared spinach
  • 1/2 cup chopped cooked ham
Directions:
  1. Preheat oven to 375. Coat 9-inch round baking pan with cooking spray.
  2. In a large bowl, combine eggs, milk, 2 oz. shredded cheddar, salt and pepper.
  3. Blend in spinach and ham. Pour mixture into baking pan.
  4. Bake for 20 minutes.
  5. Remove from oven and sprinkle with remaining 2 oz. Cheddar, let set for 2 to 3 minutes; then slice into wedges.

Eggs and ham were meant to be together and this Oven Denver Omelet proves that beyond a reasonable doubt! Frittatas are just the best and I think this Italian Sausage Frittata from Our Best Bites is definitely going to be a breakfast we won't forget!
