Crockpot Root Beer Pulled Pork

I have been looking forward to trying this recipe for so long. I am a root beer junkie. I don't drink soda anymore and I would give it up completely if it weren't for root beer. Every once in a while, I'll really want one or a root beer float and I'll get a 12-pack. I had some leftover from last time I bought it, so we decided to try this recipe out. My husband isn't a big fan of barbecue sauce, but he really liked this recipe. It was great!

Recipe from One Crazy Cookie

What you need:
  • 2 cups onions, sliced
  • 2 tbsp. minced garlic
  • 4 lb. pork roast
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 2 cans root beer
  • 16 oz. bottle BBQ sauce (I used a spicier bbq)
Directions:
**This recipe takes at the most 13 1/2 hours to make, at the least 6 1/2 hours. Make sure you plan ahead for this.**
Place half the onions and all the garlic into the bottom of your crockpot.

Salt and pepper pork to taste and place on top of onions and garlic.

Add 1 can root beer.

Cover and cook for 8 to 10 hours on LOW or 5 hours on HIGH.
Remove roast and let cool, discard onion and juices in crockpot.
In a saucepan, bring BBQ sauce and 1 can of root beer to a boil. Simmer for 15 to 25 minutes.

Meanwhile, shred pork with two forks.

Return pork to crockpot and add sauce plus the other half of the onions.

Cover and cook on HIGH for 1 to 3 hours.
