Sour Cream Banana Bread

I am becoming very interested in any recipes that include sour cream. It makes everything better! Especially when it comes to baking things - that sour cream keeps everything so moist. This is by far my favorite banana bread that I've ever eaten. It trumps my tried and true recipe AND my cake mix recipe!

What you need:
  • 1/2 c. butter, softened
  • 1 c. sugar
  • 1 tsp. vanilla
  • 2 eggs
  • 1 1/2 c. flour
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 c. mashed banana
  • 1/2 sour cream
  • 1/2 c. chopped pecans
Directions:
  1. Spray a 9x5-inch loaf pan with cooking spray and sprinkle with sugar.
  2. Beat butter and sugar until they are creamy. Then add eggs and vanilla.
  3. Stir in baking soda and salt. Slowly add flour. Mix until just combined, you don't want to overmix it.
  4. Stir in bananas, sour cream, and pecans by hand.
  5. Pour into loaf pan and bake in a preheated 350* oven for 65 minutes. Check to see if a toothpick comes out clean when inserted into the center. If not, bake another 5 minutes and check again. Repeat until cooked completely.
  6. Cool for 10 minutes and then remove from pan and let cool all the way on a cooling rack. Slice and serve.
