Butterbeer

One day last month, I got a curious stack of papers in the mail...

That's right...my acceptance letter to Hogwarts! And a supplies list...and then one letter from Percy Weasley that stated "Dear Mrs. Ellis, Due to Muggles having become recently aware of the wizarding community, the Ministry of Magic has determined that all Hogwarts letters must be sent by Muggle post until further notice. Our regrets that your letter was not delivered by traditional owl post."

My husband is a giant dork and I love him for it. So to celebrate, I made butterbeer :) It is so delicious!

What you need:
For the Butterbeer:
  •  1/3 cup brown sugar
  • 1/4 cup unsalted butter, room temp
  • 2 tbsp. honey
  • 1/4 tsp. ground cinnamon
  • 1/8 tsp. ground nutmeg
  • 1/16 tsp. ground cloves
  • Pinch of salt
  • 3 tbsp. toffee bits
  • 1/3 cup spiced rum
  • 1 cup boiling water
For the Foam:
  • 2/3 cup heavy cream
  • 2 tbsp. sugar
  • 1 tsp. vanilla extract
  • 1/2 tsp. butter
Directions:
Beat together brown sugar, butter, honey, cinnamon, nutmeg, cloves, and salt until smooth.

Stir in toffee bits and then transfer to a large measuring cup.

Add rum, then boiling water. Stir until butter mixture dissolves.
Pour through a sieve to catch any toffee bits that didn't dissolve fully, then divide into 2 mugs.
Whip heavy cream for 3-4 minutes, until it starts to thicken.
Add sugar and keep whipping until soft peaks form, around 3-4 more minutes.
Stir in vanilla and butter, then whip 30 more seconds.

Spoon a heaping dollop of foam onto the top of each mug and mix gently. Serve immediately.
Then wait for your Hogwarts acceptance letter.
