Cheesy Chicken, Bacon, and Avocado Quesadillas

This was my first recipe using avocado that I have made - short of the not-all-the-way ripe avocado I used, I really enjoyed this and I think avocado is something I will continue to eat :) The closest I had been to tasting avocado before was those Guacamole Doritos they used to make. YUM!

Do me a favor really quick...go google "chocolate chip lava cookies" - did you do it? Did you make it back here? Or did that put you in a food coma? Recipe from Kevin & Amanda

What you need:
  • 4 medium-sized flour tortillas
  • 1 lb. chicken, cooked and shredded
  • Salt and pepper
  • 1/2 cup scallions, diced
  • 8 strips bacon, cooked and crumbled
  • 1 avocado, diced
  • Shredded mild cheddar cheese
  • 2 tbsp. butter
Directions:
 Prepare bacon and chicken and dice your scallions and avocado.

Add 1/2 tbsp. butter to skillet and melt over medium heat.
Add trotilla and layer one side with chicken, bacon, avocado, scallions, and a little cheese.

Flip other half over fillings and cook 1-2 minutes on each side until golden brown.
Repeat with rest of tortillas.

    Your kidding right? The first time you've ever had avocados? I am so glad you liked them, I love them, probably a bit too much. Love your use of them in these quesadillas, looks delish.
