Cinnamon Roll Waffles

I've only made one waffle recipe since I got my waffle iron, so I thought it was time to use it again. I got mine for $20 at Walmart and I absolutely love it. It's a really basic waffle iron, but it gets the job done. I knew I wanted to make cinnamon roll waffles and this was the first recipe for them that I had in my arsenal. I loved these and so did the kids! It looks like a complicated recipe, but it really isn't.

This recipe comes straight from Nikki of Chef in Training. I absolutely adore Nikki's blog - it's probably the very closest to my taste in food. There very rarely are recipes I don't want to make that Nikki posts and when I do find one, it's because I've just made the same type of recipe a few days before she has posted. I swear we share a brain or something :) Or maybe a stomach.

What you need:
Waffles:
  • 1 3/4 cup flour
  • 2 tbsp. sugar
  • 1 tsp. baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp. salt
  • 2 eggs
  • 2 cups buttermilk
  • 1/4 cup vegetable oil
  • 1/2 tsp. vanilla
Cinnamon Topping:
  • 1/2 cup butter, melted*
  • 3/4 cup brown sugar
  • 1 tbsp. cinnamon
Cream Cheese Topping:
  • 4 tbsp. butter
  • 2 oz. cream cheese
  • 3/4 cup powdered sugar
  • 1/2 tsp. vanilla
*I may try softened butter next time. My consistency is always off on these kinds of cinnamon mixtures. Too liquidy.

Directions:
  1. For the Waffles: Whisk together flour, sugar, baking powder, baking soda, and salt. Make a well in it.
  2. In a separate bowl, whisk together eggs, buttermilk, vegetable oil, and vanilla.
  3. Pour into the dry ingredients and mix just until combined.
  4. Pour batter into a waffle iron in batches and cook until browned.
  5. For the Cinnamon Topping: Mix together all ingredients.
  6. For the Cream Cheese Topping: Heat butter and cream cheese in microwave for about 20 seconds. Mix together. 
  7. Then whisk in powdered sugar and vanilla.
  8. Drizzle waffles with cinnamon topping and then cream cheese topping.
