Coffeecake Pancakes

So when I originally saw the picture posted for this recipe, I was blown away by how delicious it looked. When I was making them, I didn't think that they would necessarily blow me away when I tasted them, but I was so so wrong. The batter is nice and fluffy. The streusel is just killer. I loved the pecans' crunch - it was such a perfect pair of textures - the fluffy pancake with the crunchy streusel.

What you need:
Streusel:
  • 1 1/4 cups flour
  • 1 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1/2 cup brown sugar
  • 1/4 tsp. salt
  • 1/2 cup butter, softened
  • 1/2 cup chopped pecans
Pancakes:
  • 1 3/4 cups flour
  • 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1/4 cup sugar
  • 1 1/2 cups buttermilk
  • 2 eggs
  • 2 tsp. vanilla
Directions:
  1. For the Streusel:  Stir flour, cinnamon, nutmeg, sugar, and salt together in a bowl. Add butter and mix until well combined. Stir in pecans.
  2. Clump on a baking sheet, breaking up into smaller bits. Bake at 25 to 30 minutes. 
  3. Cool and break into smaller pieces as needed.
  4. For the Pancakes:  Whisk flour, powder, soda, salt, and sugar together in a bowl. Make a well in the center.
  5. Add buttermilk, eggs, and vanilla. Mix until just combined.
  6. Bake 1/3 cup batter on a griddle topped with 2 tbsp. streusel until top is bubbly. 
  7. Flip and cook until browned.

Streusel on a pancake? Genius! I have a recipe for cinnamon syrup that would go perfectly with these. Can't wait to try it! Thanks for sharing!
