Ranch Crockpot Pork Chops with Parmesan Mashed Potatoes

This is such a good recipe for being a secretly flavor-packed, hearty meal. The potatoes were so, so good. I threw my whole baked potatoes into my Kitchenaid with the skins and everything and mashed them up using the paddle attachment. Easiest mashed potatoes ever! I really love potato skins, but if you don't, then you can scoop out the innards.

What you need:
  • 4 to 6 thick cut pork chops
  • 1 packet Ranch seasoning mix {homemade, if you like!}
  • 2 cans cream of mushroom soup
  • 4 to 5 potatoes
  • 5 tbsp. butter
  • 1 cup Parmesan
  • 6 cloves garlic {roasted, optional}
  • 1 1/2 cup milk
  • 1 tbsp. salt
  • 1 tsp. pepper
Directions:

Place pork chops, Ranch, and soup into crockpot.
Cook on LOW for 6 hours or HIGH for 4 hours.
Bake your potatoes and mash. Add butter, Parmesan, garlic, milk, and salt and pepper.

Serve with potatoes topped with pork and slathered in the leftover gravy from the crockpot!
