Garlic-Rubbed Bacon & Tomato Grilled Cheese + a Giveaway

I will never make another grilled cheese again that hasn't been rubbed with some garlicky goodness! That step blew these sandwiches out of the water! I really loved the fillings too - the Italian cheese was perfectly paired with tomato and bacon.

What you need:
  • 8 slices bacon, cooked until crispy
  • Shredded Parmigiano-Reggiano cheese
  • Italian bread (I used Italian sourdough)
  • 2 ripe tomatoes, sliced thinly
  • 1 to 2 large garlic cloves, peeled and cut in half
Directions:
  1. Lay down 4 slices of bread and top with some cheese. 
  2. Then add 2 slices of bacon to each piece of bread and then a few slices of tomato. 
  3. Top with some more cheese and then second slice of bread.
  4. Butter the outside of both slices of each sandwich.
  5. Brown each side in a skillet over medium heat.
  6. After both sides have browned, remove from skillet {or live on the wild side and do them in the skillet!} and immediately rub each side of all sandwiches with cut side of the garlic cloves.

I'm normally not a fan of grilled cheese but this sandwich sounds amazing!! I'm going to have to try it very soon!! Pinning!
