The Best Waffles

Since really getting into cooking and wanting to make a career out of it, I've started to really use my tastebuds and pinpoint different flavors in foods - especially the ones I don't make. My husband has sort of adopted this "tick" too and has started to try and pick out what is in the foods I make. He thought I had used pumpkin in this - which isn't surprising because there is nutmeg and cinnamon in it. It was a very perfect flavor combination for autumn - and absolutely delicious in waffle form! I don't know what I did before I bought my waffle iron. Homemade waffles are just extraordinary!

What you need:
  • 3/4 cup flour
  • 1/4 cup cornstarch
  • 1/2 tsp. salt
  • 1/2 tsp. cinnamon
  • 1/8 tsp. nutmeg
  • 1/2 tsp. baking powder
  • 1/4 tsp. baking soda
  • 3/4 cup buttermilk
  • 1/4 cup milk
  • 6 tbsp. vegetable oil
  • 1 large egg, separated
  • 1 tbsp. sugar
  • 1/2 tsp. vanilla
Directions:
 
Mix together flour, cornstarch, salt, cinnamon, nutmeg, baking powder, and baking soda.

In a separate bowl, mix together buttermilk, milk, vegetable oil, and egg yolk.
Beat egg white until soft peaks form. Then add sugar and beat until glossy and firm. Add vanilla.

Add milk mixture to dry mixture. Then fold in egg whites.

Bake in waffle iron.

Yum! These look incredible!! Do you have a waffle iron you suggest? We need to get one.

I haven't had waffles in awhile, and these look yummy. I love the fact you added Fall-themed spices. Trying these soon.
