Pumpkin Week: Pumpkin Pie French Toast

I have been meaning to make these since I first saw them. As in, the very day they were posted by Kevin of Closet Cooking. Why on earth did I wait so long? They are easy to make and if you didn't already anticipate me saying...they were oh so yummy! It's pumpkin - how can pumpkin NOT be delicious?!

I had just enough whipped cream to give to the kids and sprinkle some pumpkin pie spice on top. They ate it quicker than I could get my camera out :)

What you need:
  • 2 eggs
  • 1/4 cup milk
  • 1/4 cup pumpkin puree
  • 1/4 tsp. vanilla
  • 1/2 tsp. cinnamon
  • 1/4 tsp. ginger
  • 1/8 tsp. cloves
  • 1/8 tsp. nutmeg
  • 2 tbsp. brown sugar
  • 8 slices bread
Directions:

Mix together all ingredients but the bread.

Dip bread in the egg mixture and cook in a pan or on a griddle, 
2-3 minutes each side until golden brown.

Oooh! This looks yummy! I made pumpkin pancakes last weekend and they were delish!

YESSS!! LOVE pumpkin week! And I was thinking of french toast/breakfast for dinner tonight- definitely going to try it! Looks delish!
