Bacon & Parmesan Pasta

If you ask my newly 6 year old (his birthday was yesterday) what his favorite food is, he will tell you steak and bacon. Every time he is asked what he wants to eat, he says bacon and steak. While this pasta doesn't have steak, it does have bacon.

It also has pasta - so it's a winner in my book too! I think that I could've loosened up the pasta a little bit more.
 
Bacon & Parmesan Pasta - penne pasta with a creamy Parmesan sauce and tons of chopped bacon

What you need:
  • 1 lb. bacon, chopped
  • 1/4 tsp. pepper
  • 1 lb. penne
  • 1/2 cup heavy cream
  • 1/4 cup cream cheese
  • 1/4 cup Parmesan cheese
  • 2 eggs
  • 1/4 tsp. red pepper flakes
Directions:
Fry bacon; season with pepper. Drain and set aside.
Cook pasta al dente, according to directions. Reserve 1/2 cup pasta water.

Heat heavy cream and cream cheese in a medium saucepan on low. 
Once cream cheese is melted down, remove from heat.
Add Parmesan, eggs, and red pepper flakes.

Add sauce to pasta, season with red pepper flakes, and stir in bacon. 
Loosen with reserved water, as needed.
