I'm a big fan of roasting stuff in the oven. I'll go ahead and tell y'all it's because I can throw a piece of foil on my pan and then it doesn't get anything dirty - it's awesome! I hate dirty dishes. It's also awesome to have a side dish that takes little to no effort to prepare and is tasty. This asparagus is definitely all of that and more - I'm sure that this would be just as amazing using different spices to fit with different meals. Lemon-garlic is calling my name already!

What you need:
- 1 lb. asparagus
- EVOO
- Salt and pepper, to taste
Directions:
- Rinse asparagus and trim ends.
- Toss with a few Tbsp of EVOO and salt and pepper.
- Place on a foil-lined baking sheet and roast at 425* for 8 to 15 minutes.

i love how easy roasted asparagus is! this is just how i make mine... although i top it with a little Parm... yum!
