Marinated Pork Chops with Pineapple Salsa

I needed a good recipe to use after the strong urge to fire up the grill for the first time this year and boy, did I pick an exceptionally amazing recipe. The pineapple salsa is OUT OF THIS WORLD! I've never had a better salsa! Nick, who is not a big fan of pork chops, devoured this one and said he wanted to have it again soon.

What you need:
  • 4 bone-in, center-cut pork chops
Marinade:
  • 1/4 tsp. lime zest
  • 2 limes, juiced
  • 1 tbsp. honey
  • 1 small shallot, chopped
  • 1 jalapeno, deseeded and chopped
  • 1 garlic clove, chopped
  • 1/2 cup olive oil
  • Salt
Pineapple Salsa:
  • 1/2 pineapple, diced and cored, reserve juices
  • 1 tomato, diced
  • 1/2 red onion, minced
  • 1/2 small jalapeno, diced
  • 1 tbsp. chopped cilantro
  • 1 lime, juiced
  • Salt and pepper
Directions:
Mix all marinade ingredients together and place in a Ziploc bag. 
Add pork chops and marinade for up to 3 hours in the fridge.

Mix all salsa ingredients together while you preheat your grill. 
Taste to make sure your seasonings are right and let rest for 10 minutes.

Grill pork chops for 5-8 minutes per side on medium and let rest 10 minutes before slicing.

Serve chops with salsa over top.
