Ranch Crockpot Pork Chops with Parmesan Mashed Potatoes

This is such a good recipe for being a secretly flavor-packed, hearty meal. The potatoes were so, so good. I threw my whole baked potatoes into my Kitchenaid with the skins and everything and mashed them up using the paddle attachment. Easiest mashed potatoes ever! I really love potato skins, but if you don't, then you can scoop out the innards.

What you need:
  • 4 to 6 thick cut pork chops
  • 1 packet Ranch seasoning mix {homemade, if you like!}
  • 2 cans cream of mushroom soup
  • 4 to 5 potatoes
  • 5 tbsp. butter
  • 1 cup Parmesan
  • 6 cloves garlic {roasted, optional}
  • 1 1/2 cup milk
  • 1 tbsp. salt
  • 1 tsp. pepper
Directions:
  1. Place pork chops, Ranch, and soup into crockpot.
  2. Cook on LOW for 6 hours or HIGH for 4 hours.
  3. Bake your potatoes and mash. Add butter, Parmesan, garlic, milk, and salt and pepper.
  4. Serve with potatoes topped with pork and slathered in the leftover gravy from the crockpot!

This is such a great recipe! I've made the ranch pork chops myself! I let mine cook a little too long though and they had fallen apart by the time we ate them! :) Thanks so much for sharing this at Mom's Test Meal Mondays!
