Sloppy Joe Grilled Cheese

Because my husband was out in the field, I loaded up the menu with all his least favorite foods - sloppy joes were a given, but I wanted to try a different variation. And what better variation than a Grilled Cheese Sandwich?! These were actually pretty easy to make and really yummy!

What you need:
  • 8 slices of bread
  • 2 to 3 cups shredded cheddar cheese
  • Dill pickles
  • Butter
  • 1 lb. ground beef
  • 1/4 cup onion, chopped
  • 1/4 cup green bell, chopped
  • 1/2 tsp. garlic
  • Salt & Pepper
  • 1 tsp. mustard
  • 3/4 cup ketchup
  • 3 tsp. brown sugar
Directions:
  1. Brown ground beef with onion and green bell over medium high heat; drain if needed.
  2. Add garlic, mustard, ketchup, and brown sugar. Simmer for 30 minutes. Salt and pepper, to taste.
  3. Butter bread. Top with cheese, sloppy joe mixture, pickles, and then more cheese.
  4. Cook on medium heat until browned on both sides.

Never thought of making a sloppy joe into a grilled cheese. Will have to give that a try. I remember when I was young and my father, who was Army, would go out of town, we would eat what he didn't like! It was always fun!
