Carrot Cake Donuts

When I first saw these on Jocelyn's blog, I was seriously in awe.  They were so gorgeous and seriously...carrot cake! A perfect excuse to have carrot cake for breakfast. These donuts were every bit as delicious as they look. They were soft and moist and the frosting was incredible.

What you need:
Donuts:
  • 1/2 cup butter
  • 1 egg
  • 1/2 tsp. salt
  • 1/2 tsp. vanilla
  • 2/3 cup brown sugar
  • 2/3 cup vanilla yogurt
  • 2/3 cup crushed pineapple, drained (save the juice!)
  • 2/3 cup shredded carrots
  • 2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1 1/2 tsp. baking powder
  • 1 1/2 tsp. baking soda
  • 2 cups flour
Frosting:
  • 4 oz. cream cheese
  • 4 tbsp. butter
  • 2 tbsp. reserved pineapple juice
  • 3/4 cup powdered sugar
  • Chopped walnuts
Directions:
  1. For the donuts: Cream butter, sugar, and salt together.
  2. Add egg, vanilla, and yogurt.
  3. Stir in pineapple and carrots.
  4. In a separate bowl, mix together the dry ingredients.
  5. Slowly add dry to wet.
  6. Fill a greased donut pan.
  7. Bake at 375* for 10 minutes.
  8. For frosting, beat cream cheese, butter, and juice together. Add powdered sugar.
  9. Dip cool donuts in and top with chopped walnuts.
