Brown Sugar Bacon Waffles

In January, I was assigned Lindsay of Life & Kitchen's blog for Secret Recipe Club. I made her cheesy jalapeno corn chowder, but I very nearly made these waffles instead. I saved them anyways because I knew I definitely wanted to make them.

They are so yummy. Bacon is already good any time of the day and especially perfect for breakfast, but it was so good IN the waffles. Loved every bite.

What you need:
  • 5 slices bacon
  • 3 Tbsp. + 2 Tbsp. brown sugar
  • 2 eggs
  • 2 cups flour
  • 1 3/4 cups milk
  • 1/2 cup oil
  • 4 tsp. baking powder
  • 1/2 tsp. salt
  • 3/4 tsp. vanilla
Directions:

Cook your bacon in frying pan or in the oven (which is my preferred method). Sprinkle 3 Tbsp. brown sugar and cook 3 more minutes without flipping. Remove from pan onto a paper towel lined plate and let cool. Then break into pieces.

Beat eggs until fluffy - mix in milk, oil, baking powder, salt, vanilla, and remaining 2 Tbsp. brown sugar. Fold in bacon.

Cook in a waffle iron according to waffle iron's directions. Serve immediately!

These look awesome! I had bacon waffles at a chicken & waffles place in Chicago but I haven't tried to make my own.

Oh yum! I am currently obsessed with waffles, so I will definitely have to make these soon. And I like Melissa's idea there- bacon waffles with chicken & waffles?? Ummmm... yes, please! :)
