Countdown to 2018: Fantastical Favorites


Happy New Year! To my blogging friends, thank you for joining in to countdown to 2018 and share all the amazing recipes you posted in 2017. Today is the Wild Card day where everyone gets to choose whatever category they want. I chose to share my favorite recipes from 2017. It was hard to narrow down the list and honestly, many of my other favorites were featured in the other categories :)

  1. Rotisserie Seasoning: This is one of the best seasoning mixes I ever stumbled upon. I use it when a recipe calls for precooked chicken or shredded rotisserie chicken. It's the best!
  2. Kickin' Collard Greens: I crave collards at least once a month and this recipe is my go-to. I've made a couple people who weren't a fan of collards love it with this recipe :)
  3. No Knead Jalapeno Cheese Bread: I was not let down by this bread at all. I had been dying to use my cast iron crock and I went to Karen's blog for a recipe I knew I could trust!
  4. Ree's Burrito Bowls: Not sure what it is...maybe the zucchini...maybe the cilantro lime rice...but I love this recipe so very much.
  5. Italian Burgers with Roasted Tomatoes and Caramelized Onions: I have never and probably will never have a burger quite as good as this one. It also has sundried tomato basil aioli which is the bomb!
  6. Mississippi Pot Roast: We have made this pot roast so much and love it so much that is now referred to as "The Pot Roast". The whole extended family also loves this recipe. It's a must make.
  7. Roasted Red Pepper and Basil Stuffed Chicken: I love basil stuffed chicken but man alive! Roasted red peppers were totally a winner in this recipe.
  8. Roasted Jalapeno Egg Salad: I couldn't pass up a roasted jalapeno sandwich. I loved that it was incorporated into egg salad and I couldn't leave well enough alone and added bacon to it. So it was like jalapeno popper egg salad :)
  9. Grilled Hasselback Fajita Chicken: This is one of the most photogenic recipes I think I made all year. I finally got to go use the new grill that I got Nick for Father's Day (while he worked on college and kept an eye on the littlest kiddo) and it was so much better than just plain fajitas.
  10. 20 Minute Veggie Pasta Bake: Another favorite...pretty much because it's pasta and has zucchini. I mean....it doesn't take much to make me happy!
  11. Pretzel Bowls: The last recipe goes with the Roasted Cheesy Ham and Potato Soup from the main dish day and it is so good that you gotta stop yourself from eating the whole bowl before the soup goes in.
