Quinoa Stuffed Peppers

Quinoa seems to be taking the food world by storm lately and I really wanted to see what all the buzz was about. It's a grain that is high in protein and a great source of fiber, phosphorus, magnesium, and iron. I love stuffed peppers and thought it would be a great way to try quinoa for the first time.

I must say...this is my most favorite stuffed pepper recipe to date. The quinoa has such an amazing texture. It worked very well with the meat sauce. If you are looking to experiment and try out a new food - I highly recommend it be quinoa - and this recipe!!

What you need:
  • 2 medium bell peppers
  • 1 tsp. sugar
  • 1/2 tsp. basil
  • 1 can (15 oz.) tomato sauce
  • 1 lb. ground beef
  • 1 small onion, chopped
  • 1/2 cup quinoa, cooked
  • 1/2 cup grated cheddar cheese
Directions:
  1. Slice peppers in half lengthwise and scoop out all the seeds. Boil in salted water for about 5 minutes and drain.
  2. Mix together sugar, basil, and tomato sauce (I did this in a measuring cup).
  3. Cook ground beef with onion in a deep, large skillet. Drain, if necessary.
  4. Stir in tomato mixture and cooked quinoa. Simmer for 5 minutes.
  5. Scoop some of the skillet mixture into peppers and set the peppers into the skillet. Top with cheese on the pepper portion.
  6. Cover and cook on low for about 10 minutes.
