Peanut Butter Lover's Candy Cookie Bites

Peanut Butter Lovers' Candy Cookie Bites
What you need:
  • Peanut butter cookie dough - you can make your own, or buy the tubes
  • Miniature Reese's peanut butter cups
  • A mini muffin pan
  • Preferably mini muffin tins, if not, have some Pam handy






Directions:
Put cookie dough in a bowl.
Unwrap enough Reese's cups for each mini muffin "slot" you have.
**TIP: Place the Reese's Cups in the refrigerator. This makes it easier to unwrap them without the chocolate coming off the sides and easier to deal with for the rest of the recipe**
Roll up dough into balls. I try to stay as close to 1-inch balls as much as possible. The bigger they get, the harder it is to get them out of the pan.
Place the ball in the muffin pan (directly in a sprayed pan, or in a muffin tin).
Take a Reese's cup and start to push it down into the center of the cookie dough ball.
Put a finger on either side, to prevent breaking, and gently push it down until the cookie dough meets the top of the Reese cup.
**TIP: The refrigeration of Reese's cups really helps here! It makes it a lot stronger and less likely to break and it doesn't stick to your fingers!**
It should look something like this.
Bake in the oven at 350 for 10 to 15 minutes. My gas stove does it in 10, my electric I had used to do it in about 13. Just make sure you watch them at 10 minutes.
Let rest in pan and cool down a bit for around 5 minutes. If the cookies start cooking into each other, take a butter knife and gently slice to separate the cookies.
Turn upside-down and gently shake to get them free. If they stick, you can try to gently twist to get it out. You have to be super careful about handling them by the little round ring around the Reese's cup. Or you get what has happened in the picture above and then you are stuck eating the remains of the cookie bite. Worst Case Scenario, right? LOL

I highly suggest a glass of milk with these suckers. I made around 6 or 7 dozen with 3 pkgs of cookie dough. I have almost a full bag of Reese's cups left. I got a bag of cups per tube of cookie dough just to be sure. :) And be super careful...they are incredibly delicious and may be habit-forming!!
