The Very Best Salisbury Steak and My Mashed Potatoes

The Very Best Salisbury Steak
(Printable Version)
What you need:
  • 1 can Campbell's French onion soup
  • 1 1/2 lbs. ground beef
  • 1/2 cup dry breadcrumbs
  • 1 egg
  • 1/4 tsp. salt
  • 1/4 tsp. ground black pepper, to taste
  • 1 tbsp. flour
  • 1/4 cup ketchup
  • 1 to 3 tsp. Worcestershire sauce, to taste (I put a like 3 tbsp. LOL)
  • 1/2 tsp. mustard powder
  • 1/4 cup water
Directions:
In a bowl, combine 1/3 cup French onion soup with ground beef, bread crumbs, egg, salt and pepper. Then shape into 6 patties.
In a large skillet, brown both sides of the patties over medium-high heat. Drain excess fat.
In a small bowl, blend flour and rest of soup until smooth. Mix in ketchup, water, Worcestershire sauce and mustard powder.
Pour mixture over meat in skillet. Cover and cook for 20 minutes, stirring occasionally. I had to turn down my heat a little to keep the steaks from burning.

Fantastical Mashed Potatoes [original recipe]
(Printable Version)
What you need:
  • 4 baking potatoes, peeled and cut into smaller chunks
  • Milk
  • Butter
  • Sour Cream
  • Spices

Directions:
Put potatoes in a large saucepan and fill with water to cover potatoes. Bring to a boil. And boil the heck out of those suckers. You can turn the heat if water starts to spill out. I test my potatoes with a fork. If they start falling apart, they are good to go :)
Drain.
Put drained potatoes in a bowl and add about 1/4 cup milk (I eyeball about the same amount as I do for macaroni), as much butter and sour cream as you like. I do about 3 heaping tablespoons of butter and then add 2 heaping after it's mixed, and about 2 heaping tablespoons of sour cream. Add your spices (I use onion powder, a little garlic, seasoning salt and pepper). MIX. If you got your potatoes cooked enough, you could probably just make it with a fork, if not use a mixer. I usually use my little hand mixer, it makes them nice and creamy!
