DIY Cream of Celery Soup

There is nothing better than finding copycats of your favorite restaurant meals or store-bought items. I personally love copycats so much. I use cream of celery soup in a meal regular: tuna noodle casserole. I realized one night that I had forgotten to grab some at the store and I had already started cooking dinner...Pinterest to the rescue!

This recipe really amped up the tuna noodle casserole. Homemade is so much more delicious than store-bought. Yum!

What you need:
  • 3 Tbsp. butter
  • 3 Tbsp. flour
  • 1 cup milk
  • 1/2 cup diced celery
  • 1 Tbsp. finely diced onions
Directions:
Melt butter over medium heat.

Add celery and onions - cook until soft.

Whisk in flour until relatively smooth and cook 1 to 2 minutes.
Slowly whisk in milk and cook until desired thickness is reached.

Notes:
*This equals one can of the store bought stuff.
*To make mushroom: substitute 1/4 cup diced mushrooms for celery.
*To make chicken: use 1/2 cup milk and 1/2 cup chicken broth, instead of celery and onions - use finely diced chicken if you have it, and add 1/4 tsp. poultry seasoning.
