Deluxe Cheeseburger Salad

I love salad. I mostly love minimal toppings on salad and it usually is a lovely healthy salad. On occasion, I like a salad that isn't really too salady! :)

What you need:
  • 4 hamburger bun tops or pieces of bread
  • 1 small onion, divided
  • 2 roma tomatoes
  • 3/4 lb. lean ground beef
  • 1/2 cup finely diced dill pickles
  • 3/4 cup ketchup
  • 1 tbsp. mustard
  • 8 cups thinly sliced romaine lettuce
  • 1 cup shredded cheddar cheese
Directions:

Preheat oven to 425. 
Slice each bun into 4 strips and arrange on a pan in single layer; bake 8 to 10 minutes or until lightly toasted.

Slice half onion into rings. Cut tomatoes into large pieces. Set aside.

Cook ground beef until no longer pink, crumbling as you go. 
I took a couple rings and diced them up to cook with the ground beef.

Dice other half onion and pickles. Combine onion and pickles with ketchup and mustard in a bowl.

Add ground beef and mix well.

To serve, place lettuce on serving dish. Add ground beef mixture. Top with cheese, tomatoes and onion. Arrange the hamburger bun croutons on the edge of the serving dish.
