Penne with Chicken, Spinach, & Tomatoes

Penne with Chicken, Spinach, & Tomatoes - a #light dish that is fast to make and easy on your wallet #recipe

This recipe is great for a light, quick meal - if you are pressed on time. It's pretty frugal as well. I only had to get the chicken and tomatoes, as everything else was already stocked in my kitchen :)

What you need:
  • 8 oz. penne
  • 1/3 cup chicken broth
  • 3 cloves garlic, minced
  • 8 oz. spinach
  • 3 roma tomatoes
  • 1 1/2 cups cooked chicken
  • 1/2 tsp. oregano
  • 1/2 tsp. basil
  • 1/4 tsp. salt
  • 1/3 cup Parmesan cheese
  • Salt and pepper
Directions:
  1. Cook penne al dente, reserving 1/2 cup water for later.
  2. Heat chicken broth on medium heat.
  3. Add garlic cloves and cook for 2 to 3 minutes.
  4. Add spinach, oregano, basil, and salt. Cook 3 more minutes.
  5. Add pasta, water, chicken, and tomatoes. Cook over medium-high heat for 2 to 3 minutes.
  6. Add cheese and heat until it melts. Salt and pepper to taste.
