This recipe is great for a light, quick meal - if you are pressed on time. It's pretty frugal as well. I only had to get the chicken and tomatoes, as everything else was already stocked in my kitchen :)

What you need:
- 8 oz. penne
- 1/3 cup chicken broth
- 3 cloves garlic, minced
- 8 oz. spinach
- 3 roma tomatoes
- 1 1/2 cups cooked chicken
- 1/2 tsp. oregano
- 1/2 tsp. basil
- 1/4 tsp. salt
- 1/3 cup Parmesan cheese
- Salt and pepper
- Cook penne al dente, reserving 1/2 cup water for later.
- Heat chicken broth on medium heat.
- Add garlic cloves and cook for 2 to 3 minutes.
- Add spinach, oregano, basil, and salt. Cook 3 more minutes.
- Add pasta, water, chicken, and tomatoes. Cook over medium-high heat for 2 to 3 minutes.
- Add cheese and heat until it melts. Salt and pepper to taste.
