Weeknight Taco Stuffed Peppers - with beer and potatoes included! #recipe #dinner

I thought that the Philly cheesesteak stuffed peppers were the best peppers I had ever had until I tried these babies. I also learned a new trick with stuffed peppers that made it a lot easier to devour eat: cutting them in half. There are many parts of this recipe that made me weary - beer in taco meat? Potatoes in stuffed peppers? But they made the dish. I could not stop eating the remaining taco meat while the peppers were baking. And the mashed potatoes? Shoot - every stuffed pepper should have mashed potatoes in it!

What you need:
  • 3 green bell peppers
  • 1 1/2 lb. ground beef
  • Taco seasoning mix
  • 12 oz. beer
  • Mashed potatoes
  • Sharp Cheddar cheese
  • Green onions
Directions:
  1. Cook ground beef; add taco seasoning and beer. Simmer until beer is absorbed.
  2. Cut peppers in half lengthwise and take out the seeds and ribs. Place in a foil-lined pan.
  3. Add meat to peppers. Top with potatoes, cheese, and green onions.
  4. Bake at 350* for 20 minutes.

This sounds delicious! I had never thought to make taco style stuffed peppers- good thinking, lady! :)
