It's Sandwich Week here on Fantastical :) Sandwiches are one of my favorite kinds of food. I think mostly because you can have a sandwich for any meal [including snack] - they are so versatile!
I'm kicking off the week with a recipe I found on Pinterest that I thought my husband would totally dig. And I was right! I couldn't get enough of that ooey gooey cheesy picture that was posted. I really want to try this sammy with actual roast - I'm thinking a BBQ sauce smothered, slow cooked roast :)

What you need:
- Red onion, thinly sliced
- 1 to 2 Tbsp. butter, plus some
- Roast beef
- Sliced provolone cheese
- Sliced American cheese
- Melt butter over medium heat and fry onions until soft. Add roast beef and heat through.
- Melt a Tbsp. or so more of butter in another skillet over medium heat.
- Add one slice of bread to the skillet and top with cheese, beef and onion, and more cheese. Top with one more slice of bread and fry on both sides until they are golden. Repeat with remaining roast beef, adding more butter to the pan, as needed.
