Load 'n Go Gorp

What you need:
  • 1/4 cup butter or margarine
  • 4 cups frosted Cheerios cereal
  • 4 cups Bugle original corn snacks
  • 1/2 cup raisins (I omitted)
  • 1 cup miniature marshmallows
  • 1 cup candy-coated chocolate candies
Directions:
  1. Heat oven to 300. Place butter in 13x9-inch pan; heat in oven 2 to 3 minutes or until melted (watch to prevent burning). Stir in cereal, corn snacks, and raisins until evenly coated.
  2. Bake 10 minutes, stirring every 5 minutes. Cool slightly, about 10 minutes.
  3. Stir in marshmallows and candies. Store in loosely covered container.

Better-than-Ever Cheesy Meat Lasagna

Update 3/1/13: I made this for an FRG meeting and it was GONE! Everyone loved it and I was really surprised that my husband, who knowingly ate it with cottage cheese in it, liked it. Both of us aren't really fans of lasagna anyways, so I'm excited to know that every blue moon when I am craving lasagna, he will eat this recipe of it.

Cowboy/Cowgirl Cookies *gift idea*

I did this for a couple friends and family members. I'm hoping to do it for a bunch more people next year :]
I also made one for myself, but I have yet to be able to make them. This is from bakerella.

What you need:
  • 1 1/3 cups flour, spooned into a measuring cup and leveled
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1 cup cooking oats
  • 3/4 cup M&Ms
  • 3/4 cup semi-sweet chocolate chips
  • 1/2 cup brown sugar, packed
  • 1/2 cup white sugar
  • 1/3 to 1/2 cup chopped pecans
Directions:
  1. Stir flour, baking powder, baking soda, and salt in a bowl.
  2. Start with a 1-qt. smooth Ball jar. Layer ingredients in the following order making sure to pack each level tightly or else it won't all fit: flour, oats, M&Ms, chocolate chips, brown sugar, white sugar and chopped pecans.
  3. The oats, M&Ms and chocolate chips are hard to pack down, but the brown sugar is a great layer to push the others down tightly. You can adjust the pecans more or less to fit to the top.
  4. To decorate, get fabric and suede cord. Cut fabric in 6-inch squares and suede in 25-inch pieces. Place fabric on top and tie ribbons around the lid to hold it in place.

  6. Also if you ARE making them around a holiday - you can use seasonal M&Ms :] I used Christmas ones!

If you want to make the cookies...
Other things you need:
  • 1/2 cup butter, almost melted
  • 1 slightly beaten egg
  • 1 tsp. vanilla extract
Directions:
  1. Preheat oven to 350.
  2. Stir dry ingredients in a bowl and add in other ingredients. Combine thoroughly.
  3. Roll into 1 1/2-inch balls and bake for 10 minutes each.

    Crunchy Mayo Pork Chops

    Update 12/14/2012: So this was way overdue for an updated picture. Especially since the one I had on here for 2 years is ridiculously awful looking. So here you go - new picture :)



    Even if you don't like mayonnaise, you should try this! I thought it was particularly great :] Recipe courtesy Cafemom member momandstepmom

    What you need:
    • Pork chops
    • Salt and pepper
    • Mayonnaise (I use Hellman's - I think it's the very best)
    • Spiced bread crumbs
    • Corn flakes, crushed (I used Rice Krispies)
    Directions:
    Salt and pepper both sides of the pork chops.

    Cover in mayonnaise

    Cover in a mixture of bread crumbs and corn flakes (or Rice Krispies).

    Bake at 350 until done, about 1 hour.

    Chicken Enchilada Soup

    What you need:
    • 3 chicken breasts
    • 5 cups chicken stock
    • Cumin
    • Chili powder
    • Dried, diced onions
    • Cayenne pepper
    • 1 cup uncooked rice
    • 2 pints salsa
    • 1 can each black beans and navy beans
    • 1 can enchilada sauce
    Directions:
    1. Bring first set of ingredients (up to rice) to a boil in a large saucepan.
    2. Continue boiling until chicken is cooked. Use spatula to chop chicken into bite-sized pieces.
    3. Add remaining ingredients and bring to a boil.
    4. Reduce to a simmer for 40 to 60 minutes.
    5. Eat with tortilla chips or oyster crackers and cheese.

    Spinach & Ham Frittata

    What you need:
    • Vegetable cooking spray
    • 6 eggs
    • 1/2 cup skim milk
    • 4 oz. shredded Cheddar cheese
    • 1/2 tsp. salt
    • 1/4 tsp. pepper
    • 1 1/2 cups prepared spinach
    • 1/2 cup chopped cooked ham
    Directions:
    1. Preheat oven to 375. Coat 9-inch round baking pan with cooking spray.
    2. In a large bowl, combine eggs, milk, 2 oz. shredded cheddar, salt and pepper. Blend in spinach and ham. Pour mixture into baking pan.
    3. Bake 20 minutes. Remove from oven and sprinkle with remaining 2 oz. Cheddar, let set for 2 to 3 minutes; then slice into wedges.

      Melt-in-Your-Mouth Chicken Breasts

      When I got this recipe, I knew I was going to have to wait until my husband deployed to try it out. He hates mayonnaise and if he knows it is in a food, he will straight up refuse to eat it. I, on the other hand, love mayonnaise. This recipe was amazing. The chicken was definitely melting in my mouth.

      What you need:
      • 4 boneless chicken breast halves (or you know me, tenderloins)
      • 1 cup mayonnaise
      • 1/2 cup parmesan cheese, freshly grated
      • 1 1/2 tsp. seasoning salt
      • 1/2 tsp. ground black pepper
      • 1 tsp. garlic powder
      Directions:
      Place chicken in baking dish.

      Mix together mayonnaise, cheese and seasonings.

      Spread over top of chicken breast and bake at 375 for 45 minutes.

      Best Ever Banana Cake with Cream Cheese Frosting

      What you need:
      • 1 1/2 cups bananas, mashed, ripe
      • 2 tsp. lemon juice
      • 3 cups flour
      • 1 1/2 tsp. baking soda
      • 1/4 tsp. salt
      • 3/4 cup butter, softened
      • 2 1/4 cups sugar
      • 3 large eggs
      • 2 tsp. vanilla
      • 1 1/2 cups buttermilk
      Frosting:
      • 1/2 cup butter, softened
      • 1 (8 oz.) pkg. cream cheese, softened
      • 1 tsp. vanilla
      • 3 1/2 cups icing sugar (powdered sugar)
      Garnish:
      • Walnuts, chopped (I omitted so my son could eat it)

      Directions:

      Preheat oven to 275. Grease and flour a 9x13-inch pan. In a small bowl, mix mashed banana with lemon juice (helps to slow oxidation); set aside.

      In a medium bowl, mix flour, baking soda and salt; set aside.

      In a large bowl, cream 3/4 cup butter and 2 1/8 cups sugar until light and fluffy.

      Beat in eggs, one at a time, then stir in 2 tsp. vanilla.

      Beat in the flour mixture alternately with the buttermilk.


      Stir in banana mixture.

      Pour batter into prepared pan and bake in preheated oven for one hour or until toothpick inserted in center comes out clean.

      Remove from oven and place directly into the freezer for 45 minutes. This will make the cake very moist.

      For the frosting, cream the butter and cream cheese until smooth. Beat in 1 tsp. vanilla.

      Add icing sugar and beat on low speed until combined, then on high speed until frosting is smooth.


      Spread on cooled cake.

      Sprinkle chopped walnuts over top of frosting, if desired. :]

      Tatortot Casserole


      This is a variation I found on Cafemom from Harleymama2008. And immediately thought of how AMAZING it sounded. Instead of cream of chicken, use cheddar cheese soup and instead of green beans or corn, broccoli! HEAVEN. Especially for my family because 3 out of 4 love love broccoli! It was absolutely delicious.

      • 1 lb. hamburger
      • Cheddar cheese soup
      • Broccoli
      • Shredded cheese
      • Tatortots
      Directions:
      1. Brown hamburger; drain.
      2. Combine all ingredients.
      3. Bake at 350 for an hour.

      Starbucks Pumpkin Spice Latte copycat

      What you need:
      • 3 tbsp. canned pumpkin
      • 2 tbsp. vanilla-flavored syrup
      • 1/4 tsp. pumpkin pie spice
      • 1 cup milk
      • 1 (3 oz.) espresso (1 to 2 shots)
      Directions:
      In a small saucepan, stir pumpkin puree into milk. Add vanilla syrup and pumpkin pie spice.

      Heat gently; continuing to stir occasionally, just until steamy and foam begins to appear.

      Pour  pumpkin flavored milk into a tall mug...

      ..and pour espresso over top.
      **Top with whip cream and a dash of pumpkin pie spice. Note: if you like it slightly sweeter, add a bit of vanilla flavored coffee creamer.

      To make into a frappe: Combine equal parts of this recipe and ice in a blender and blend on high until smooth. And top with whipped cream and sprinkle with pumpkin pie spice :]

      Slow Cooker Pulled BBQ Chicken


      This is probably my favorite pulled meat sandwich recipe - I love the addition of zucchini!

      What you need:
      • 1 1/2 cups BBQ sauce
      • 1 cup grated zucchini, raw and peeled
      • 1/4 cup vegetable or chicken broth
      • 2 tbsp. oat bran (if you cannot find this, you can use oats)
      • 4 skinless, half chicken breasts (2 lb.)
      • 6 hamburger buns or English muffins
      Directions:

      Preheat slow cooker to desired setting. In slow cooker, mix BBQ sauce with zucchini, broth and oat bran.

      Add chicken and toss. Cover. Cook 5 hours on low or 2 1/2 hours on high. For best results, do not uncover during cooking.
       *Remove chicken and shred using 2 forks. Toss with BBQ sauce. Serve on buns or muffins.

        YES! I finally finished! :D

        After vigorously spending the last days on the new layout - I finally finished it. The recipe list is completed and I will now have a lot easier of a time updating when I add new recipes. I have 6 or 7 recipes in my drafts and will be adding two or so a day until I catch up. I will also be working on the Facebook recipe index over the next week or so.

        Please feel free to make any suggestions on the layout - something that you think will look better, or make it easier to find recipes, etc. I am open for suggestions!

        This girl got a Kitchenaid Artisan stand mixer! I used it last night for the first time and nearly fainted in awe and utter adoration. It is amazing. Amazon has pretty good deals right now on them, if you want one!

        Cheeseburger Pasta

        This is a really quick meal that the kids love..who am I kidding? I love it too! It's delicious :)

        What you need:
        • 1 lb. ground beef
        • 1 can Campbell's Cheddar cheese soup
        • 1 can Campbell's tomato soup
        • 1 1/2 cups water
        • 2 cups uncooked medium shell-shaped pasta
        Directions:
        1. Cook the beef in a 10-inch skillet over medium-high heat until the beef is well browned, stirring frequently to break up meat. Pour off any grease.
        2. Stir the soups, water and pasta into the skillet.
        3. Heat to a boil; reduce heat to medium.
        4. Cook for 10 minutes or until the pasta is tender but still firm, stirring often.
